There is a common misconception that to have great tasting BBQ, you need to see large amounts of smoke.
What You Should See:
Clear-Blue Haze. You want clean, invisible heat coming from your grill. When you see this, that means the combustion process is complete and the dirty, unwanted byproduct of the combustion process is left behind. It might be concerning for some of you to not see smoke, but rest assured, the only source of heat in the grill is a live wood fire.
Why this is important:
The more smoke you see, the more carbon, ash, and other chemicals are left behind. The visibility of the smoke is directly related to what’s left in it. These carbons and ash will leave behind a very bitter taste.
